Bikini Recipe

Makes enough for 10 people

To make the Clementine Cordial (yields 750ml)

300ml newly squeezed clementine juice
200ml recently pressed lemon juice
500g caster sugar

To make the Drink (yields 850ml, serving 10)

400ml good quality vodka
100ml dry gin
150ml peach-flavored liqueur
200ml clementine cordial (from the recipe above)
A few cranberries, as a garnish
Mandarin essential oil, for finishing

Instructions

To prepare the Cordial: Place all the items in a pan, bring to a simmer, stirring so the sugar melts. Then, turn off the stove and leave to cool down entirely. Transfer to a clean bottle, seal and refrigerate it in the fridge, where it will keep for up to one month.

For the Batch Mix: Combine the specified spirits and syrup into one large bottle, allow it to infuse for an hour, then filter it best through muslin, making it fully clarified.

To serve: Pour 85ml of your batch mix into your mixing glass containing ice, and agitate lightly for about 60 seconds to cool it down. Pour into a frosted cocktail glass or equivalent, decorate with the cranberries and finish using a brief mist with the mandarin essence over the top.
